India and the United States follow as major producers, with India increasing production from 16 million metric tons in 2019 to 17 million in 2023, while the U.S. saw a slight decline from 17 million metric tons in 2022 to 16 million in 2023. Notable declines occurred in countries such as Romania, where production dropped sharply from 1,100 thousand metric tons in 2022 to 515 thousand in 2023, and Ukraine, which decreased from 1,023 thousand metric tons to 1,000 thousand metric tons in the same period, likely reflecting regional challenges. Turkey experienced a significant recovery in 2023, rising to 4,063 thousand metric tons from a low of 3,695 thousand in 2022. Overall, global production remained relatively stable around 424 to 433 million metric tons, indicating steady demand despite regional variances.
