Wheat

Wheat is a a whole grain cultivated for human consumption due to its high protein content. It is used for flour to be used in baking goods, pastas, snacks, etc. Lower quality grains are used as animal feed. It is also used to make alcoholic beverages and biofuel through a process of fermentation. Wheat straw can be used as a construction material for roofing thatch.

Major wheat producers include the EU, China, India, Russia, the United States, France and Canada, among others.

Different classes of wheat include: durum, hard red spring, hard red winter, hard white, soft red winter and soft white.

Soft red winter wheat is traded at the CBOT under ticker symbol W. Hard red winter wheat is traded at the KCBT under ticker symbol KW.
